Survey Results: Food Allergy Knowledge among Restaurant Managerial Staff

A survey of 110 restaurant managerial staff in the U.S, sought to investigate the level of awareness and preparedness in serving customers with food allergies. The findings of the survey were:

  • 70 percent of participants had given food allergy training in the past year.
  • 22 percent indicated that food allergy reactions had occurred in their restaurants in the past year.
  • Top strategies to accommodate food allergies were declaring food allergens, modification of recipes upon request, and providing food allergen information on the website.
  • 40 percent failed to identify soy and fish among the top allergens.
